I’ve been researching the benefits of raw food. Uncooked vegetables offer us so many nutrients. I’ve been trying to incorporate raw foods into my daily regimen.
As you know from following this blog, I LOVE KALE! So I researched several raw kale recipes and of course came up with my own version. I hope you will be daring and try it.
After I made it I brought some to work the next day for some of my meat eating co-workers to try. They enjoyed it! I think this can replace your traditional iceberg lettuce salad as an appetizer. I also incorporate this into my collard green wraps and sometimes just eat it with tomato. Enjoy.
DIRECTIONS
1- Thoroughly wash your kale.
2-Pull the kale off the stems.
3-Take a few leaves at time and roll them into a cigar shape and thinly slice.
4-Add 1/8 cup Extra Virgin Olive Oil.
5- Add the juice from 1/2 a lemon
6-Add 3 tablespoons of curry powder.
7-Add 1/4 teaspoon of sea salt and black pepper.
8-Massage kale with your hands until kale is glossy and broken down. Be sure the ingredients are well blended.
9-Shred a red bell pepper and add that to bowl.
10-Shred a zucchini and add that to bowl.
11- Add sunflower seeds or your favorite nut.
12-Toss together and serve. Eat as is or add tomato (see last photo).
13-Place the leftovers in the refrigerator.
