Yes…you read it right…COLLARD GREEN. I have really taken a liking to wrapping things in collard greens. This healthy green is high in Vitamins A, C, K and E…calcium, copper, manganese, selenium and zinc. I know we all have a history of eating them cooked to death on Thanksgiving…but give them a try raw. You can thank me later. :)

For this post I decided to use baked portobello mushrooms, sprouts, cabbage and peppers. Feel free to use whatever you have at home. Then if you have some salsa you can dip your wrap in that. Yum. Ooh…I’m getting hungry all over again.
